- 1 lb. beef tenderloin
- 3 Tbsp. cooking oil
- 1 1/2 c. sliced mushrooms (4 oz.)
- 1/2 c. ginger ale
- 1/4 c. beef broth
- 1 c. dairy sour cream
- hot, cooked fine noodles
Directions

1Cut beef tenderloin across grain in 1/4-inch thick strips. In skillet, heat cooking oil.

2Quickly brown the meat in oil for 2 to 4 minutes.

3Remove meat from skillet.

4Add sliced mushrooms and cook 2 to 3 minutes.

5Remove mushrooms.

6Add sherry and beef broth to skillet and bring to a boil.

7Cook, uncovered, until liquid is reduced to 1/3 cup.

8Stir in dairy sour cream.
