- 3/4 lb. sirloin or flank steak
- 2 Tbsp. oil
- 2 c. sliced mushrooms
- 1 medium onion, sliced
- 1 (13 3/4 oz.) can beef broth
- 1/2 tsp. paprika
- 1 1/2 c. dry Minute rice
- 1/2 c. sour cream
- 1/3 c. catsup or tomato paste
- 8 cherry tomatoes, halved
- fresh parsley, chopped
Directions

1Saute beef quickly in hot oil in skillet.

2Add mushrooms and onion; saute about 5 minutes.

3Add broth, Worcestershire sauce and paprika.

4Bring to a full boil.

5Stir in rice.

6Cover; remove from heat.

7Let stand 5 minutes.

8Stir in sour cream, catsup and tomatoes.

9Sprinkle with chopped parsley, if desired.
