- 6 Tbsp. butter
- 2 Tbsp. onion, minced
- 2 lb. beef tenderloin
- 1/2 lb. mushrooms, sliced
- 1/8 tsp. nutmeg
- freshly ground pepper
- 1 c. sour cream
Directions

1Melt 3 teaspoons butter in a heavy skillet.

2Add the onion and cok slowly until transparent.

3Remove and set aside.

4Cut the beef in 1 inch by 2 1/2 inch strips.

5Turn the heat to medium-high; add the beef and cook briefly, turning brown on all sides.

6Remove the beef and set aside with the onions. Add the remaining 3 tablespoons butter to the skillet.

7Stir in the mushrooms, cover and cook 3 minutes.

8Season with pepper and nutmeg.

9Whisk the sour cream and add to the pan, but do not allow it to boil. Return the beef and onions to the pan and just heat through. Yield: 6 servings.
