Beef Stroganoff

- 1 lb. lean beef (round or sirloin steak)
- 1 large onion, sliced or chopped
- 1/2 lb. fresh mushrooms
- 1/4 c. butter or margarine
- 1/2 c. or small can tomato juice
- 1/4 c. sherry
- 1/2 c. water
- salt and pepper to taste
- 1/2 c. dairy sour cream
Directions

1Trim fat from meat; slice in thin narrow slices.

2Dredge in flour.

3In heavy skillet, brown meat in butter.

4Remove meat to dish and brown onions and mushrooms slightly.

5Add meat to pan and all liquids and seasonings except sour cream.

6Simmer on low for about 2 hours, adding more water as needed and stirring frequently.

7At serving time, thicken juices in pan with a bit of flour and water; turn up burner and blend in sour cream quickly but do not boil.

8Serve over cooked broad noodles or rice.
