  • 2 tablespoons oil
  • 2 tablespoons butter
  • 4 large cloves garlic
  • 1 1/2 pounds portabella mushrooms, baby
  • 1 cup beef broth, more may be necessary
  • 3 tablespoons Cognac or brandy
  • 1 cup sour cream
  • 1 heaping tablespoon Dijon mustard
  • 2 tablespoons ketchup
  • thyme
  • cayenne pepper, to taste
  • Salt and pepper
  • Paprika
