  • 1 small Spanish onion, chopped
  • 1 large tomato, chopped
  • 1 clove garlic, minced
  • 1 lb. ground beef
  • 2 Tbsp. ground mild red chile and 2 Tbsp. ground hot red chile or 2 1/2 Tbsp. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1 tsp. salt
  • 3/4 c. grated Cheddar cheese
  • 3/4 c. grated Monterey Jack cheese
  • salsa
  • 1/2 head lettuce
  • 12 taco shells

Directions

    Heat the oven to 225°.

    Warm the taco shells in the heated oven.

    Brown the beef in a frying pan.

    Stir in the ground chiles, oregano, cumin, garlic and salt.

    Cook until the flavors blend about 5 minutes.

    Take the taco shells from the oven and raise the heat to 400°.

    Fill the taco shells with the meat mixture.

    Add cheese.

    Heat in the oven until cheese melts, about 5 minutes. Top with lettuce, onion and tomato.
