- 4 pounds Beef Tenderloin
- 4 teaspoons KOSHER salt ( 1 tsp per pound)
Directions

1Season meat with salt and preferably, let sit over night or for several hours.

2Preheat oven to 475 degrees

3Place meat on roasting rack and cook at the high temperature for 15 min.

4Reduce heat to 350 degrees and continue cooking for another 40 min
-
5Remove meat from oven and wrap tightly, like a log, with HEAVY DUTY aluminum foil.

6Let rest on carving platter for 1 hour.

7Carve in thick slices and serve with bearnaise sauce.
