Beef Vegetable Borsch

  • 2 Tbsp. butter
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 1/2 head cabbage, shredded
  • 1 Tbsp. minced parsley
  • 1 c. stewed tomatoes
  • 2 cans beef broth
  • 1 Tbsp. vinegar
  • 1 can beets (undrained)
  • 1 or 2 c. diced cooked beef
  • salt and pepper
  • 1 tsp. or more sugar
  • sour cream

Directions

    In large kettle, melt butter.

    Saute vegetables for 3 minutes. Add tomatoes, broth, vinegar, beets and meat; bring to boil. Cover; simmer for 30 minutes.

    Season to taste.
