- 2 Tbsp. butter
- 1 medium onion, chopped
- 2 carrots, sliced
- 1/2 head cabbage, shredded
- 1 Tbsp. minced parsley
- 1 c. stewed tomatoes
- 2 cans beef broth
- 1 Tbsp. vinegar
- 1 can beets (undrained)
- 1 or 2 c. diced cooked beef
- salt and pepper
- 1 tsp. or more sugar
- sour cream
Directions

1In large kettle, melt butter.

2Saute vegetables for 3 minutes. Add tomatoes, broth, vinegar, beets and meat; bring to boil. Cover; simmer for 30 minutes.

3Season to taste.

4Top with sour cream.
