- 6 whole Medium Tomatoes
- 1 pound Ground Beef
- 1 whole Medium Onion, Chopped
- 2 cloves Garlic, Minced
- 2 teaspoons Dried Basil
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 1/2 cups Rice, Previously Cooked
- 1/2 cups Cheddar Cheese, Shredded
- 1 whole Egg
Directions

1Preheat the oven to 350 degrees.

2Cut a thin slice off the top of each tomato and discard; remove the core.

3Carefully scoop out the pulp, leaving a 1/2-inch shell.

4Reserve 1 cup of the pulp and discard the rest.

5Invert tomato shells on a paper towel to drain.

6In a large skillet, cook the beef with the onion and garlic; drain grease.

7Stir in the basil, salt, pepper and reserved tomato pulp; bring to a boil.

8Reduce the heat and simmer, uncovered, for 10-12 minutes or until the liquid has evaporated.

9Stir in the rice, cheese and egg; heat through.

10Spoon into the tomato shells.

11Place in a shallow 2-quart baking dish.

12Bake uncovered for 20-25 minutes.
