Beer Bread

  • 1 bottle (12 oz) beer
  • 1/2 tsp active dry yeast
  • 3 tbsp honey
  • 4 cups whole wheat flour
  • 2 cups rye flour
  • 1 1/2 tbsp salt

    Dissolve yeast and honey in lukewarm beer. Mix flours and salt in large bowl. Add the beer mixture and 3/4 cup lukewarm water. Knead into a smooth dough. Cover and let stand for 1 hour.

    Briefly knead dough on a floured work surface. Shape into a round loaf and place on a baking pan lined with parchment paper. Score the outline of a circle on the surface of the loaf 1 inch from the edge. Cover and let stand for another 30 mins.

    Meanwhile, preheat oven to 425°F. Bake bread for 35 mins or until browned and sounds hollow when tapped. Cool on wire rack.
