  • 1 whole 3-4 Pound Chicken, Giblets Removed
  • 1 can (12 Oz. Size) Beer (You Can Drink Half)
  • 3 Tablespoons Olive Oil
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Tarragon
  • 1 teaspoon Lemon Pepper Seasoning
  • 1 Tablespoon Seasoned Salt
  • 1 stick Butter

    The grill needs to be prepared for indirect heat on medium high.

    This means that the chicken will cook beside the flames, not directly over them.

    So, for example, if youre using a gas grill heat only one side of the burners.

    In a small bowl, combine the olive oil and all seasonings.

    You will have to use your hands for this rub the mixture all over the chicken, getting under the skin as much as you can.

    Open up your can of beer and pour about half of the beer out.

    Lower the chicken, with the cavity side down, onto the top of the beer can.

    Place the chicken topped can of beer on the side of the grill that isnt over direct heat.

    Put the grill cover down and try not to open it.

    I do check mine after about an hour, but its best to mostly leave it alone.

    Melt the stick of butter in the microwave.

    After about an hour, quickly open the grill and evenly pour the butter over the chicken, then close the grill cover and continue to cook for another 30 minutes or so.

    It should be done after about 1 1/2 hours or until breast meat registers 180 on a meat thermometer.
