Ingredients

  • 1 1/2 c. Crisco oil
  • 3 eggs
  • 2 c. sugar
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 Tbsp. vanilla
  • 1 c. canned beets, diced
  • 1 1/2 c. cottage cheese
  • 1 c. coconut
  • 1 c. crushed pineapple
  • 1 c. walnuts, chopped

Directions

  1. 1
    Blend and mix well the Crisco, eggs and sugar.
  2. 2
    Sift together flour, salt, cinnamon and baking soda, then add to first mixture. Add remaining ingredients and mix well. Bake in greased and floured Bundt pan at 350° for 50 to 55 minutes.

    May be served plain or with Cream Cheese Frosting.
