  • 2 pkg. lemon Jell-O
  • 2 small cans shoestring beets (drain and reserve juice)
  • 1/2 c. vinegar
  • 2 tsp. grated horseradish
  • 2 tsp. grated onion
  • 1 Tbsp. sugar
  • 1/4 tsp. salt

Directions

    To beet juice, add enough water to make 3 cups.

    Bring to boil, dissolve Jell-O.

    Add remaining ingredients except beets together. Set aside to thicken.

    Add beets.

    Chill until firm.
