Beet Molded Salad

Ingredients

  • 1 can dried beets
  • 1 1/2 Tbsp. grated onion
  • 1/4 c. thinly sliced stuffed olives
  • 1 Tbsp. horseradish
  • 1 1/2 c. chopped celery
  • 2 (3 oz.) pkg. lemon jello
  • 1 1/2 Tbsp. vinegar
  • 1/4 tsp. salt

Directions

    Drain beets and add enough water to make 1 1/2 cups liquid. Heat to boiling and add to gelatin, vinegar and salt.

    Chill until partially set.

    Stir in remaining ingredients.

    Chill until firm. Good topped with sour cream, mayonnaise or yogurt.
