  • 2 qt. vinegar
  • 2 c. water
  • 2 c. sugar
  • 2 or 3 Tbsp. pickling spice
  • 6 or 7 lb. beets

Directions

    Cook beets until tender; peel and cut to size.

    Bring vinegar, water, sugar and spice to a boil.

    Add beets; cook for 5 minutes. Pack and seal.
