- 1 gallon beets
- 1 cup vinegar
- 1 cup sugar
- 1 teaspoon allspice
- 2 cups water
Directions

1Boil beets until tender and skins will slip off easily.

2Pour off water.

3Run cold water on and slip off skins.

4Bring vinegar, sugar, water and allspice to a boil.

5Put beets in jars; pour boiling liquid over and seal jars.

6Wait a few days before eating them.
