  • 2 c. sugar
  • 1 1/2 tsp. salt
  • 3 1/2 c. vinegar
  • 1 1/2 c. water
  • Dutch oven full of beets, cooked and sliced or whole

    Boil first 4 ingredients and pour over beets that have been put in jars.

    Process 30 minutes in water bath.

    Yields 7 pints.
