- 8 qt. fresh beets
- 1 tsp. cloves
- 1 qt. vinegar
- 10 cinnamon sticks
- 1 1/2 c. sugar
- 1 c. water
Directions

1Leave root and 1-inch of stem on beets.

2Scrub well with vegetable brush.

3Place beets in saucepan and add enough water to cover.

4Bring to boil.

5Cover and cook 35 to 40 minutes or until tender; drain.

6Pour cold water over beets and drain again.

7Let cool.

8Trim off beet stem and roots and rub off skins.
