- fresh beets
- 2 c. vinegar
- 2 c. sugar
- pickling spices
Directions

1Wash beets with vegetable brush and place in a large pot. Cover with water and bring to a boil. Boil until able to pierce with fork, then remove from pot. Take vinegar, sugar, 1 1/2 cups beet juice and pickling spices and mix together.

2Place in pot and bring to a boil.

3Peel beets, then slice or dice.

4Place beets into clean and hot canning jars.

5Pour hot juice mixture over the beets and seal jars.
