- 3 c. sugar
- 1 1/2 Tbsp. whole allspice
- 2 tsp. salt
- 4 c. vinegar
- 1 1/2 c. water
- 5 qt. peeled, cooked small beets
- 2 sticks cinnamon
Directions

1Pack cooked beets into hot, sterilized jars.

2Combine remaining ingredients in saucepan; simmer 15 minutes.

3Remove cinnamon.

4Pour boiling hot liquid over beets, leaving 1/2-inch headspace.

5Adjust caps.

6Process pints and quarts 30 minutes in boiling water bath or let pressure reach 10 pounds and remove from burner.

7Makes 5 quarts.
