  • 1 c. sugar
  • 1 c. vinegar
  • 1 c. water (that beets were cooked in)
  • salt (1 tsp. to each qt.)

Directions

    Wash beets thoroughly.

    Boil until tender; slip peelings off. Cut, if needed.

    Place in jars.

    Add salt, then brine.

    Seal jars. Heat in hot water bath for 10 minutes.
