- 2 gal. beets
- 3 c. sugar
- 3 c. vinegar
- 1 1/2 c. water
- 1 tsp. pickling spices
Directions

1Wash beets and cut tops, about 2-inches from beet.

2Cook beets until tender.

3Set aside to cool.

4When cool enough to handle, peel beets and cut in slices or chunks whichever you prefer.

5Mix sugar, vinegar, water and pickling spices and bring to a boil. Add beets and boil 1 minute.

6Put in jars and seal.
