  • 2 c. coarsely shredded cooked beets
  • 2 Tbsp. chopped onion
  • 2 Tbsp. red wine vinegar
  • 1 tsp. sugar
  • 2 Tbsp. Dijon mustard
  • 3 Tbsp. vegetable oil
  • salt and pepper to taste
