  • 1 1/2 lb Beets
  • 3 tbsp Red wine vinegar
  • 3 tbsp Olive oil
  • 1 Salt
  • 1 cup Greek yogurt
  • 1/3 cup Walnuts, coarsely chopped
  • 2 3 garlic cloves, minced

Directions

    Cut beets into chunks or slices

    pour half the vinegar and half the olive oil over top
  3. 3
    season with salt

    cover & let marinade 1hr at room temp
  5. 5
    combine yogurt, rest of vinegar and oil, garlic & pinch of salt in bowl

    mix

    pour sauce over beet slices & stir

    chill in fridge 1hr

    add walnuts just before serving
