  • 1 (8 oz.) can diced beets
  • 1/4 c. sugar
  • 1 tsp. horseradish
  • 1 (3 oz.) pkg. lemon Jell-O
  • 1/4 c. vinegar

Directions

    Drain beets. Add enough water to beet juice to measure 1 1/2 cups liquid. Bring liquid to a boil. Add Jell-O. Stir well to dissolve. Add sugar, vinegar and horseradish. Stir until sugar is dissolved. Add beets. Chill until Jell-O is set.
