  • 1 lb beet
  • 1 1/4 cups yogurt
  • 3.5 oz ricotta cheese
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1/4 cup finely chopped fresh chives
  • 1/3 cup finely chopped fresh mint leaves

Directions

    Preheat oven to 350°F. Wrap beet in foil and roast for 1 hour, or until tender. Let cool then peel and coarsely chop.

    Transfer chopped beet to a food processor along with yogurt, ricotta, garlic and lemon juice. Pulse until combined. Transfer to a serving bowl and fold in herbs.
