Beets With Horseradish Sauce

  • 1 cup scrubbed chopped beets
  • 1 cup water
  • Pinch sea salt
  • 1 1/2 tspns of prepared horseradish
  • 2 1/4 tspns red wine vinegar
  • 2 1/4 tspns umeboshi vinegar

Directions

    In a small saucepan, combine the beets and water to a boil. Add the salt. Reduce the heat to medium and cook for 20 minutes or until the beets are tender. In a blender or food processor, blend together with horseradish, and both vinegars. Enjoy!
