- 8 Belgian endives
- 2 Tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lemon
- 1 c. water
- Parmesan cheese
Directions

1Trim endive root ends and separate leaves; wash thoroughly. In a skillet, melt butter and arrange endive leaves.

2Sprinkle with salt and pepper.

3Add lemon juice and water.

4Bring liquid to a boil.

5Cover tightly.

6Cook over low heat for 30 minutes or until liquid has dissolved.

7Remove endive to serving dish and serve with grated cheese on top.
