  • 2 c. flour plus 2 Tbsp.
  • 2 Tbsp. confectioners sugar
  • 1 Tbsp. vegetable oil
  • 2 tsp. vanilla
  • 3 eggs, separated
  • 2 tsp. baking powder
  • 2 c. milk
  • pinch of salt
  • fresh fruit topping (optional)

Directions

    Combine all ingredients except egg whites.

    Beat egg whites until stiff and fold into batter.

    Pour 1/2 cup measure into waffle iron.

    Bake about 2 minutes.

    Top with fruit or syrup. Makes 8 waffles.
