  • 1 whole Medium Cucumber
  • 4 Tablespoons Onion
  • 1/4 teaspoons Salt
  • 8 ounces, weight Cream Cheese, Softened
  • 2 drops Green Food Coloring, Optional

Directions

    Peel & seed cucumber.

    Grate or spin in food processor.

    Ditto for the onion.

    Drain excess liquid from cucumber.

    Combine grated cucumber, onion, salt, & softened cream cheese.

    Stir in green food coloring if using.

    Spread on crustless white bread (think tea sandwiches).
