- 2 tsp. cornstarch
- 1/3 c. water
- 1 tsp. finely shredded lemon peel
- 1/4 c. lemon juice
- 3 beaten egg yolks
Directions

1Lemon Mousse:

2In saucepan combine sugar and cornstarch; add water, lemon peel and lemon juice.

3Cook and stir over medium heat until thickened and bubbly.

4Gradually stir hot mixture into egg yolks; return to saucepan.

5Cook and stir over medium heat until thickened and bubbly; cook and stir 2 minutes more.

6Remove from heat.

7Cool slightly, then cover and chill.

8Beat 1 cup whipping cream to soft peaks, fold 1/2 cup into lemon mixture.

9Fold lemon mixture into remaining cream.
