Berry Jam Mini Cheesecakes

- 150 grams Cream cheese
- 1 Egg
- 30 grams Granulated sugar
- 2 tbsp Corn starch
- 2 tsp Lemon juice
- 60 grams Blueberry jam
Directions

1Return the cream cheese to room temperature.

2Or, microwave for about 30 seconds (at 500-600 W).

3Preheat the oven to 180C.

4Knead the cream cheese until soft, add the granulated sugar and mix in.

5Add in a whisked egg and lemon juice, then mix together well.

6Sift in the corn starch, and mix together well.

7Pour into the molds.

8Add about 10 g of jam to the center of each one.

9Bake for about 20 minutes in a 180C oven.

11Remove from the mold once it has cooled.

12Garnish with mint leaves (not listed) if you have it.

13If you eat these later then wrap each in plastic wrap, and store in the fridge.
