Ingredients

  • 2 c. flour
  • 3/4 c. milk
  • 1 egg
  • 2 1/2 tsp. baking powder
  • 1/4 to 1/3 c. sugar
  • 1/2 tsp. salt
  • 1/4 c. butter, melted
  • 1 c. berries (huckleberries, blueberries or cranberries), if sour berries, use 1/3 c. sugar

Directions

    Mix and sift dry ingredients, reserving 2 tablespoons flour for dredging the berries.

    Beat egg slightly, add milk and gradually the dry ingredients.

    Add melted butter.

    Fold in berries to coat well with flour.

    Pour into greased muffin tins and bake in hot oven.

    Bake at 400° for 30 minutes or until brown. Serve at once.
