Berry Nice Muffins

Ingredients

  • 1 12 cups whole wheat flour (wholemeal flour)
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon bicarbonate of soda
  • 1 12 teaspoons baking powder
  • 23 cup butter, melted and cooled. (May use margarine, canola oil, sunflower oil, etc if you are unable to use butter)
  • 1 cup berries (may use frozen or fresh. if using frozen, do not defrost)
  • 14 cup milk
  • ice cream, to taste

    Mix dry ingredients together.

    Make well in center and add the eggs, butter and milk and mix well.

    (Mixture is dough-like, however you may add more milk if you are finding it hard to mix.

    After you have mixed well, gently stir in berries.

    Place mixture into muffin tin.

    Bake in preheated oven at 180 degrees (160 fan forced) for about 25 minutes Muffins are ready when they spring back once touched.

    Serve with ice cream if desired.
