Berry Pecan Pie

  • 1 c. water
  • 1 1/2 Tbsp. flour
  • 1/4 c. butter
  • 2 eggs
  • 3/4 c. light corn syrup
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 c. pecans, chopped
  • 1 c. fresh or frozen cranberries
  • 1 (9-inch) pastry shell (use deep dish)

Directions

    Cream together syrup, flour and butter.

    Add eggs, corn syrup, salt and vanilla; beat until well blended.

    Stir in pecans and cranberries.

    Pour into unbaked pastry shell.

    Bake in preheated 350° oven for 60 to 70 minutes or until knife inserted halfway between center and edge comes out clean.

    May serve with whipped cream on top.
