- 1 tablespoon vegetable oil
- 1 1/2 cups corn meal self-rising
- 1 cup buttermilk
- 2 eggs beaten
- 3 tablespoons vegetable oil
- 8 3/4 ounces cream style corn
- 1/2 cup green pepper chopped
- 6 slices bacon cooked and crumbled
- 1/4 cup canned jalapeno peppers chopped
- 2 cups shredded sharp cheddar cheese divided
Directions

1Grease a loaf pan with 1 tablespoon oil.

2Combine next 8 ingredients in a bowl, stirring well.

3Pour half of cornmeal mixture into pan.

4Sprinkle with 1 cup of cheese.

5Top with remaining corn meal mixture.

6Bake at 350 degrees for 45 minutes.

7Sprinkle with remaining cheese and bake 10 more minutes.

8Additional baking time may be needed if toothpick, inserted in center, emerges wet.
