  • 1 tablespoon vegetable oil
  • 1 1/2 cups corn meal self-rising
  • 1 cup buttermilk
  • 2 eggs beaten
  • 3 tablespoons vegetable oil
  • 8 3/4 ounces cream style corn
  • 1/2 cup green pepper chopped
  • 6 slices bacon cooked and crumbled
  • 1/4 cup canned jalapeno peppers chopped
  • 2 cups shredded sharp cheddar cheese divided

Directions

    Grease a loaf pan with 1 tablespoon oil.

    Combine next 8 ingredients in a bowl, stirring well.

    Pour half of cornmeal mixture into pan.

    Sprinkle with 1 cup of cheese.

    Top with remaining corn meal mixture.

    Bake at 350 degrees for 45 minutes.

    Sprinkle with remaining cheese and bake 10 more minutes.
