- 1 baked shell
- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 2 c. water
- 1/3 c. lemon juice
- 3 eggs, separated
- 3 Tbsp. butter
- 1 1/2 tsp. lemon extract
- 2 tsp. vinegar
Directions

1Mix sugar and cornstarch together in top of double boiler.

2Add water.

3Combine egg yolks with juice and beat well.

4Add to the rest of the mix.

5Cook until thick over boiling water for 25 minutes.

6Add lemon extract and vinegar and stir.

7Pour into pan and cool.

8Cover with meringue and brown in oven for 10 minutes at 350°.
