  • 1 (16 oz.) pkg. black-eyed peas
  • 6 c. water
  • 4 slices hickory smoked bacon
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. white wine vinegar
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic salt

Directions

    Sort and wash peas.

    Place in large Dutch oven.

    Cover with water 2 inches above peas.

    Let soak for 8 hours; drain.

    Add 6 cups water and remaining ingredients.

    Bring to boil, reduce heat and simmer for 1 1/2 hours.

    Yields 6 cups.
