- 1 (16 oz.) pkg. black-eyed peas
- 6 c. water
- 4 slices hickory smoked bacon
- 1 Tbsp. salt
- 1 Tbsp. sugar
- 1 Tbsp. white wine vinegar
- 1/4 tsp. black pepper
- 1/4 tsp. garlic salt
Directions

1Sort and wash peas.

2Place in large Dutch oven.

3Cover with water 2 inches above peas.

4Let soak for 8 hours; drain.

5Add 6 cups water and remaining ingredients.

6Bring to boil, reduce heat and simmer for 1 1/2 hours.

7Yields 6 cups.
