- 6 ripe tomatoes, chopped
- 2 c. sliced mushrooms (8 oz.)
- 6 to 8 oz. Mozzarella, cut in strips
- 1/2 c. chopped fresh basil
- 2 garlic cloves, minced
- 1/2 c. olive oil
- 1 tsp. salt
- 1 lb. linguini
- 1/2 c. Parmesan cheese (1 oz.)
Directions

1Mix all the sauce ingredients and let set at room temperature for 1 hour or more.

2Cook and drain pasta.

3Serve hot in warmed bowls, topped with a ladleful of sauce and garnished with Parmesan. Serves 4 to 5.
