- 2 tablespoons butter
- 1 teaspoon canola oil
- 4 shallots, minced
- 1 lemon, zest of
- 1 lime, zest of
- 1 orange, zest of
- 2 cups quinoa
- 4 cups water
- 14 cup buckwheat honey
- 14 teaspoon salt and pepper
Directions

1In large saucepan, heat 1 tsp of the butter and oil over low heat; cook shallots, stirring occasionally, until caramelized (about 20 minutes).

2Add lemon, lime and orange rind; cook for 1 minute and transfer to bowl.

3Add quinoa to saucepan; cook, stirring, until toasted (about 4 minutes).

4Add water and bring to boil; reduce heat, cover and simmer until liquid is almost absorbed (about 12 minutes).

5Uncover and cook, stirring, for 2 minutes.

6Stir in shallot mixture, honey, salt, pepper and remaining butter.
