  • 4 cups broccoli, cut into 2- to 3-in. pieces
  • 4 cups cauliflower, cut into 2 in. pieces
  • 3 cups Brussels sprouts, halved
  • 2 carrots, peeled and cut in 1/2-in. slices
  • 1/4 cup olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 teaspoons finely chopped toasted walnuts
  • 2 garlic cloves, minced
  • 1/2 lemon

    Bake in preheated oven 10 minutes, undisturbed. Remove from oven; quickly toss vegetable mixture with walnuts and garlic. Return to oven, and bake until caramelized and tender, 5 to 10 more minutes. Squeeze lemon over veggies just before serving.
