  • 1lb 4oz spinach, washed
  • 1 onion, chopped
  • 3 eggs, beaten
  • 16oz ricotta cheese
  • 10oz Parmesan cheese, freshly grated
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 2 9-in gluten-free pie shells

    2. Steam the spinach, squeeze to drain well and roughly chop.

    3. In a large bowl, mix the onion, beaten eggs, both types of cheese, pepper & nutmeg, and mix the cooked spinach.

    4. Transfer mixture to one pie dish. Roll remaining mixture in sections of other pie shell.

    5. Bake in preheated oven for 25a30 minutes.
