- 1 onion, chopped
- 3 eggs, beaten
- 16oz ricotta cheese
- 10oz Parmesan cheese, freshly grated
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon freshly grated nutmeg
- 2 9-in gluten-free pie shells

22. Steam the spinach, squeeze to drain well and roughly chop.

33. In a large bowl, mix the onion, beaten eggs, both types of cheese, pepper & nutmeg, and mix the cooked spinach.
