Ingredients

  • 1/4 c. olive oil
  • 3 medium onions, sliced thin
  • 2 medium green peppers, diced
  • 2 medium cloves garlic, minced
  • 12 lb. tomatoes, peeled, seeded and diced
  • 1 (12 oz.) can tomato paste
  • 1/4 c. packed brown sugar
  • 3 carrots, thinly sliced
  • 2 Tbsp. salt
  • 2 tsp. oregano
  • 1 1/2 tsp. basil
  • 1/2 tsp. black pepper

Directions

    In 8-quart Dutch oven, over medium heat in hot oil, cook onion, carrots, green peppers and garlic until tender.

    Add tomatoes and remaining ingredients.

    Over high heat, heat to boiling.

    Reduce heat to medium-low and cook 2 hours, stirring occasionally.

    Freeze and use up to 1 year.
