- 1/4 c. olive oil
- 3 medium onions, sliced thin
- 2 medium green peppers, diced
- 2 medium cloves garlic, minced
- 12 lb. tomatoes, peeled, seeded and diced
- 1 (12 oz.) can tomato paste
- 1/4 c. packed brown sugar
- 3 carrots, thinly sliced
- 2 Tbsp. salt
- 2 tsp. oregano
- 1 1/2 tsp. basil
- 1/2 tsp. black pepper
Directions

1In 8-quart Dutch oven, over medium heat in hot oil, cook onion, carrots, green peppers and garlic until tender.

2Add tomatoes and remaining ingredients.

3Over high heat, heat to boiling.

4Reduce heat to medium-low and cook 2 hours, stirring occasionally.

5Freeze and use up to 1 year.
