  • 1 c. sugar
  • 1 c. Crisco or butter
  • 5 eggs, well beaten
  • 3 c. flour
  • 1 c. coconut
  • 1 c. candied cherries
  • 1 box white raisins
  • 1 lb. orange slices
  • 1 lb. mixed fruits
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1/2 c. peach juice
  • 1 tsp. nutmeg
  • 1 tsp. lemon flavoring
  • 2 c. nuts, chopped

    Cream shortening and sugar.

    Add eggs.

    Sift 2 cups flour with salt, soda and baking powder.

    Save 1 cup flour to dredge fruits before adding to mixture.

    Add flour with peach juice to shortening mixture.

    Add flavoring, fruits and nuts.

    Line tube pan with brown paper.

    Grease pan.

    Bake at 250° for 3 1/2 hours. Cover top of pan with greased brown paper.

    This prevents cake from browning too quickly on top.
