Biscuits With Cracklings

Ingredients

  • 1 cake yeast
  • 1/4 c. lukewarm milk
  • 4 c. flour
  • 1 tsp. salt
  • 2 c. cracklings, chopped
  • 1 egg
  • 1 c. sour cream
  • 1 cooked potato, mashed

Directions

    Dissolve yeast in milk.

    Add salt to flour, then work in cracklings as for pie crust.

    Combine egg with sour cream and add to flour mixture with dissolved yeast.

    Mix quickly.

    Shape into ball and refrigerate a few hours.

    Roll out on floured board and fold up like a handkerchief.

    Chill.

    Repeat rolling and folding and chill again, about 3 times.

    Roll out on floured board to 1/2-inch thickness and cut with round cutter.

    Place on greased cookie sheet.

    Let raise until about double in size.

    Bake at 350° for 20 to 30 minutes.
