Black Bean And Chocolate Cake

Ingredients
- 1 1/4 cups black beans boiled
- 3 large eggs
- 1/2 cup sugar
- 2 1/2 tablespoons maple syrup or honey, optional
- 3 tablespoons cocoa powder
- 7 5/8 tablespoons dark chocolate 70% cocoa, chopped
- 1 teaspoon instant coffee
- 1/2 vanilla bean scraped
- 1 teaspoon baking powder
- 1 pinch salt
Directions

1Preheat oven to 180C.

2Put all ingredients, except chocolate, into the blender.

3Blend at speed 5 for 20 seconds, or until you get a smooth cream (the mass stays liquid but is normal).

4Pour batter into a rectangular pan, greased and dusted with cocoa powder, and lay the pieces of chopped chocolate on top.

5Put the cake in the oven for 35-40 min, or until a toothpick inserted in the center comes out clean.

6Let it cool completely before unmolding.

7Decorate it as you like.
