Black Bean And Chocolate Cake

Ingredients

  • 1 1/4 cups black beans boiled
  • 3 large eggs
  • 1/2 cup sugar
  • 2 1/2 tablespoons maple syrup or honey, optional
  • 3 tablespoons cocoa powder
  • 7 5/8 tablespoons dark chocolate 70% cocoa, chopped
  • 1 teaspoon instant coffee
  • 1/2 vanilla bean scraped
  • 1 teaspoon baking powder
  • 1 pinch salt

    Preheat oven to 180C.

    Put all ingredients, except chocolate, into the blender.

    Blend at speed 5 for 20 seconds, or until you get a smooth cream (the mass stays liquid but is normal).

    Pour batter into a rectangular pan, greased and dusted with cocoa powder, and lay the pieces of chopped chocolate on top.

    Put the cake in the oven for 35-40 min, or until a toothpick inserted in the center comes out clean.

    Let it cool completely before unmolding.

    Decorate it as you like.
