- 2 c. black beans
- 8 oz. yellow rice
- 2 or 3 tomatoes
- 12 oz. Mozzarella cheese, grated
- 1 can olives (black)
- 1 1/2 tsp. ground cumin
- 1 tsp. ground coriander
- 3 cloves crushed garlic
Directions

1Soak beans 4 to 8 hours, then cook by bringing to a boil. Simmer until done.

2Cook rice by instructions on bag.

3Cook beans with coriander, cumin and garlic.

4Place beans in a large casserole dish.

5Add rice, then chopped tomatoes with juice.

6Add cheese and olives.

7Bake at 350° for 30 minutes.
