Black Bean Casserole

Ingredients

  • 2 cans black beans, drained and mashed
  • 1 can chopped Ro-Tel, drained
  • 2 to 3 zucchini squash, sliced
  • 1/2 onion, chopped
  • 1 c. kernel corn, drained
  • flour tortillas, quartered (for serving)
  • shredded cheese
  • 2 to 3 tsp. cumin
  • cayenne pepper to taste
  • salt and garlic powder to taste

Directions

    Combine beans, Ro-Tel and spices.

    Microwave squash, onion and corn until tender, but crisp (or saute).

    Spray dish with Pam. Start with bean mixture, next layer tortillas, then veggies, cheese, then bean mixture and so on.

    End with bean mixture and top with cheese.

    Bake at 375° until bubbly, about 25 to 30 minutes.
