- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 jalapeno pepper, chopped (optional)
- 1 cup fresh cilantro, chopped
- 5 (14 1/2 ounce) canssouthwestern tomatoes and green chilies
- 2 (14 1/2 ounce) cans black beans
- 1 (7 ounce) can diced green chilies
- 1 teaspoon oregano
- 1 teaspoon cumin
Directions

1Saute onion and garlic in olive oil.

2Add jalapeno pepper, if desired; this chile is spicy enough for most people without the jalapeno.

3Combine all ingredients, except the cilantro, in a pot or crockpot.

4Cook on low heat until the chile is warmed through.

5Add cilantro about 15 minutes before serving.

6Leftovers can be frozen and reheated later.
