Black Bean & Corn Salad

Ingredients

  • 2 20-oz cans black beans, drained & rinsed
  • 3 scallions, chopped
  • 1 jalapeno pepper, seeded & minced
  • 1/2 C monterey jack cheese
  • 2 T corn or olive oil
  • ground pepper to taste
  • 1 C fresh corn or thawed frozen corn
  • 1 4-oz can chopped mild green chilis
  • 2 T chopped cilantro
  • Juice of 1/2 lime
  • 3/4 tsp ground cumin

Directions

    1. Combine beans, corn, scallions, chilis, jalapeno, cilantro and cheese in bowl.

    2. Whisk together lime juice, oil and cumin. Pour over bean mixture and mix well. Season to taste with pepper.

    3. Serve at room temperature or chill and allow flavors to blend. Good served in taco shells or soft tortillas too.
